Who is this programme for?

Food safety supervisors, quality personnel and managers responsible for maintaining controls and reviewing performance.

The manufacturing route applies management-level learning to production, including allergen control, process hazards, verification, product traceability and recall arrangements.

What will you learn?

Develop the ability to supervise and improve food safety arrangements rather than relying only on individual handling practices.

  • Supervision of hygiene practices, training and verification activities.
  • Hazard analysis, food safety management systems and control of contamination.
  • Audits, corrective action, traceability and response to product problems.

How can records support food safety decisions?

Records are useful when they show whether a control was applied, whether a deviation occurred and what action followed. A manager needs to connect that information with observations of how work is performed, rather than viewing documentation as a separate administrative exercise.

The learning supports a more systematic review of recurring problems, staff training and verification. In manufacturing, the connection extends across production stages, traceability and arrangements for responding when a product may be affected.

How is the published knowledge assessment structured?

The OSHAS programme page describes an open-book knowledge assessment with 3 hours allowed and a minimum pass score of 65%. These are the rules for this programme, not a universal pass mark for every OSHAS course. Practical duties also require competence appropriate to the work.

How does management-level study differ from food-handler training?

Food-handler learning addresses the actions needed for safe daily work. Management-level study also considers how to organise, verify and improve the system across people and processes. You need to connect records and observations with decisions about training, controls and corrective action.
